About this course
John Tracey has won awards throughout Australia for his speciality salami and gourmet sausages. John's salami recipes and techniques come from his time spent learning the age old art in the commune of Motta Camastra on the island of Sicily. In this one night workshop you'll learn how to make your own salami, from start to finish, leaving you with a tasty salami or two to take home and hang up to cure (and then eat!).
Materials Required: All ingredients included.
Please bring to to the class:
- Paring knife
- Note pad and pen
- 2 tea towels
- a good size container for taking food home
- an apron
And please wear comfortable shoes, you'll be busy on your feet for the night!
